Is it safe to keep using the oven in the meantime?
If it heats at all and there is no gas smell and no scorching, short-term use is normally fine. Anything with a burning smell, a tripping breaker or visible arcing is a stop-now fault rather than a schedule-it-in one.
Why is the temperature off but the display looks right?
The display shows what the control board believes, and the board believes the sensor. A sensor that has drifted out of spec reports the wrong number confidently, so an oven can run thirty degrees off with everything looking normal from the front.
Is this worth repairing, or should I replace the unit?
On a built-in at this level, almost always repair. A column or a pro range is expensive enough to replace — and usually built into cabinetry that a different unit will not drop straight into — that even a significant repair wins on cost.
